Course Overview
The foods program at Calgary Academy allows students to develop an appreciation for basic to advanced food skills through food preparation.
General topics covered include preparing various foods, safety and sanitation, and using basic kitchen equipment while learning proper cooking techniques. Instructed by a professional chef, students will learn to cook a variety of dishes of varying difficulty.
The intro, intermediate and advanced foods courses at Calgary Academy focus on the “why” aspect while combining direct instruction and guided and hands-on learning, which sets it apart from basic foods classes.
Learning by Grade Level
Grade 10
Foods 10 provides students with the opportunity to prepare food using basic learned skills and explore the fundamentals of introductory cooking. Through teamwork, at the introductory level, students will be able to fully demonstrate proper safety and sanitation, knife skills through making snacks and appetizers, as well as basic contemporary baking skills.

Grade 11
Foods 20 helps students build on skills developed at the intro level. This intermediate level course places a continuing emphasis on knife skills through making basic soups, sauces and creative cold dishes. Students will gain practical cooking experience while learning about dairy products, eggs, simple bread making, and basic meat cookery.
- Prerequisite: Foods 10
Grade 12
Foods 30 helps students build on the competencies developed at the intermediate level. This advanced-level course will teach students to use their skills to demonstrate creative baking, more advanced bread making with yeast products, and increased complexity in soups and sauces. Meat cookery skills will be further developed, and regional cuisine will also be explored at this level.
